Pakoda/Pakora are such a great way to use up left-over veg. Some chickpea flour, some spices, some veg. Completely #vegetarian too. (I add a little eno too, to give the batter some "bounce" but it is not necessary.) The batter is best if left to sit for 20 mins after mixing, to hydrate the flour (and makes lump removal easier).

Here I made some with the green parts of a whole lot of spring onions. Serve with some sauce or chutney, and what a snack!
