tired but still got to bake a strudel ... for reasons™
reasons being mainly that I don't want cereals for breakfast again
it's a failure, the pastry fell to pieces. I don't know what I did wrong. Well I'm baking it anyway #yolo

@piggo If you mean that strudel which "burst open", then what you did wrong is you obviously did not "air-vent" it. When you just roll it and then bake, it will almost certainly "explode" - as in your pictures. The next time take a good advice from you mom, or grandma, take a fork and *after* you smear the top with an egg yolk (the glossy top is a matter of taste of course) you poke the whole strudel roll with it. This will create holes in the pastry and when baked, the accumulated gases will have a way to vent. In result, your strudel will remain in one piece and won't explode. Good luck there!

@FailForward no that's not what happened. the pastry fell apart already when i was folding it. For some reason it was not flexible enough...

@piggo
Hmm, was the filling perhaps warm when you folded it? As for the dough elasticity, is largely a function of fat content.

@FailForward No it was cold... idk. I made that mistake before, using hot filling with puff pastry is a sure way to destroy it.

One thing that could be wrong is that the shortening was taken from the fridge, but it should have been warmed up by the time i tried to roll the dough. It's also possible I should have used more eggs or more water (despite precisely following the recipe). I'll maybe try it again and experiment a little...
