How do I get started with #ReverseEngineering an image file format?

I have a thermal camera which generates .irg files.

They appear to be JPEGs with extra metadata.

I can use a Windows program via WINE to read them, but can't find anything for #Linux.

So, where would you start trying to document these files?

(I know I'm going to regret having asked this 😅 )
