How difficult (and expensive) would it be to put together something like a full-face mask (or at least covering the eyes) that is connected to a small external camera and has a display on the inside of the mask, so that the wearer can still clearly see around them?

As an engineer I would simply go with a cheap transparent fibre glass in place of the screen and camera

Well if you want to make a mask with a camera outside and screen inside then probably you should go with quantum dot display screens and any sports camera like GoPro, etc.
Though ofcourse the challenge here is for powering the screen so you will also have to attach batteries for that
