I DON'T want to type this anymore, so if you've come here to tell me Sushi is made with cold rice, it is not, it's made with cooled rice, room temperature at the most, cold rice is too hard and it won't bind. This is why gas station type sushi is gross, because it's been refrigerated and the textures are all wrong.
Okay, I've been told that there is some kinds of Japanese or Chinese dishes that use cold rice, if you know what they are called let me know!
