@LouisIngenthron I pressure cook it for 45 min for ~4lbs with garlic cloves (uncrushed) and onions cut in half, then crock pot it afterwards (w/the pork shredded and sauce added) for about 2 hrs on low.
The InstaPot method (45 min) allows me to get a great deal (3-4 cups) of pork broth which I let cool and skim off the lard - which I use for other recipes - and keeps it out of final product.
I love it this way! Plenty of "accidental" extras: broth, lard, and a full 5-6 meals of pork BBQ!
