Got me feta to use so I made a riff of something I loved in Greece — bouyiourdi.

It’s basically a baked Greek salad sans cucumber & with double feta (I mean double feta you’d get on a Greek salad in Greece!).

So this is probably 110 grams of feta, a Roma tomato, some red onion, bell pepper, oregano, a splash of red wine vinegar, & olive oil. I fucked up & added olive oil twice. 🙄 poured some off for a salad dressing tomorrow, ha.
