To my horror I've discovered the 6 eggs I bought a while back ALL need to be used...by today! So, I'll be making 2 cakes in a bit and hard-boiling the rest. Damn.

Whereas professional cooks specifically use eggs that are past their use by date to make dishes that require beaten egg whites as the whites of stale eggs beat up better!
