What do you mean by "humanity-organism"? That humanity as a whole can be understood as one organism?

Hasn't this humanity-organism been aging from the very beginning on?

In a way I'd say that this humanity-organism should systemically be much closer to an immortal organism (because of adaptation/evolution) than individual humans.
