It usually would, but Qoto's Mastodon fork is a bit different. Because our hashtag following feature existed before that of vanilla Mastodon, it's implemented differently (and has more features). :)
@mangoallergy I just checked and it does also work on the website (with the latest Mastodon). Click on the hashtag and at the top of the page it shows a icon of a person with a plus sign. Click that to follow the hashtag. (Your instance is running an older version, but I hope it will work.)

@mangoallergy In Ice Cubes (an iPhone app) you can click on the hashtag in any post that includes it, and the app will show you a follow button. I think it works similarly on the web site, but I’m not sure.
