Si es por subsistencia, habrá que buscarles alternativas, pero la falta de agua es algo crónico y que sólo va a empeorar, y en todo el sur de Europa. Nadie se va a salvar. Hasta en Galicia empieza a pasar, no digo más. Eso no hay transvase que lo arregle.

I use Android because some apps I need to use only have Android (or iOS) versions. Those are for work, banking, government...
When I can choose, I use Ubuntu.
Seriously, did you need for anybody to explain this to you? If you are lucky enough to use free software only, please don't rub it in for the rest of us.
And if she wants/wanted to use propietary software, she has the right to do so. If you want to help, do it recommending GAFA free alternatives.
I'm all in for advocating free software. But it must be done gently. Nobody is going to change tools because something is shouting.

My applications usually require JS because they have some features that can't be done server side. If I have to require it, I may as well use it.
Using JS not always leads to more battery use. Network connections drain power too; and reloading a page to show some detail can be awfully wasteful when you already have all the data client side. And I'm not giving a worse service to 99% of users to help 1%.
Users that disable JS (I do it myself as user sometimes to avoid ads and mobile data charges, so I get the point) should be treated as blind users: we must give them the best functionality we can, but we should not harm nearly all of our users for their sake.
Disclaimer: I have clients who require us to disable the page if JS is not enabled. And they don't even want to discuss it; it is a hard prerequisite.
I think your rule is good for most of public sites, where nearly all can be cached, but doesn't fit for very personalized or dynamic content, internal applications, or when there are concerns about server load. Some users have metered connections, and doing most of the work client side is much cheaper for them.
So, even if you can do something server-side, sometimes you shouldn't.
We are generally abusing client side, that's true. Your rule is perfect for most news sites, blogs, or static content pages.
A good example is an online XML formatter: should it be client side or not? I see it as a perfect fit for a PWA: code would be cached, you would be able to use it with no network, and it would be much faster, with no server load. Can it be done server side? Of course. Should it?
I can't agree. I frequently do real time data visualization, using XML or JSON for getting data and client JS to paint graphics and do updates. Should I do this using full page reloads, and paint everything on the backend? Seems like a terrible experience and a wasteful way to do it.

Not really answering your question; but in the hope it can help:
I try to avoid typing out of a desk; you can't get good ergonomics without a good desk (and a good chair!). And tactile screens are terrible for tendonitis; the bigger, the worse. Pay attention to your back and neck, tablets are terrible for that, too.
If you can't avoid it, be extremely careful and do frequent rests; it can get very serious, very fast.
About keyboards, the more old fashioned they look, the less troublesome they are (flat ones are pure evil).
My experience seeking mice is test many, buy (or keep) the ones that feel good (they're like gloves: they must fit your hand). The perfect mice for somebody can be terrible for you.
About keyboards, I don't type so much; pain usually comes form touch and mouse, so I haven't researched so much.

Neo-liberalism has reigned for half a century, we got to its limits, and even the rich are painfully aware there is no sense in going further; it would be worse even for them. Problem is, people in power really don't know where to go. Because the thing that are killing the economy are the unbearable inequality, the ecological collapse, and all other things neo-liberalism never considered an issue and even promoted as a good thing.
